The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.
To file a health-related complaint, call the Department of Environmental Health at 423-209-8110. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.
Reasons including observed employee roll burrito, wrap in paper, and place in bag for service without wearing gloves. Burrito was discarded and education provided on proper glove use. Observed red coloring inside ice storage on ice-then employee use ice to prepare drink for service. Discontinue use of ice machine until properly cleaned and sanitized. Multiple items in facility are not properly date marked that have been open for more than 24 hours -cooked chicken, corn dogs, hot dogs. Bag of onions outside walk-in stored on floor. Food debris/ accumulation inside upright freezer units. Accumulation of food and rubbish under soda machine and outside walk-in unit on floor.
Reasons including employee is unable to demonstrate proper ware-washing at three compartment sink. When inspector asked about sanitizer for washing dishes, employee grabbed the hand sanitizer and when chlorine/bleach was mentioned employee indicated that soap and bleach were mixed for ware-washing and then rinsed off. Front hand-wash sink is dry indicating no recent use, paper towels are not present, and soap dispenser is not functional. Back hand-wash sink is blocked by boxes, no paper towels present and no soap at sink. Foam is being used to separate cones in bin. Presence of cockroach activity observed in kitchen- above three compartment sink in back, near grease trap.
